Creamy Chicken Pasta Recipe

This recipe is filled with tasty veggies that are sauteed in olive oil and butter. Veggies such as fresh minced garlic, spinach, and red bell peppers. The veggies and penne pasta are then tossed in a well-seasoned alfredo sauce with a touch of mozzarella cheese. The chicken is so delicious and flavorful from the great combination of spices. You can make this dish in under 35 minutes and it’s so fulfilling to the tummy!

Creamy Chicken Pasta Recipe
Ingredients
This recipe serves up to 2 to 3 people
- 2 tbsp Butter
- 2 cups Spinach
- 1 ½ cup Dry Penne Pasta
- 2 cloves Garlic (minced)
- 1 Red Bell Pepper (Thinly sliced)
- Water (To cook pasta)
- Salt (optional)
Seasoned Chicken Breast:
- 2 Chicken Breast
- 1 Tbs Olive oil
- ½ tsp Dry Parsley
- 1 tsp Kinder's Blackened with Cayenne & Lemon Rub Seasoning (Substitute: Chili powder or Paprika)
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 2 tsp Dash Salt-Free Lemon pepper seasoning
- 2 tsp Dash Salt-Free Chicken Grilling Blends
Seasoned Pasta Sauce:
- 2 Jars Classico Creamy Alfredo Pasta Sauce 150z (Substitute: your choice of regular alfredo sauce)
- ½ Cup Mozzarella Cheese
- ½ tsp Parsley
- ½ tsp Lawry’s Seasoned Pepper
- 1 ½ tsp McCormick Salt-Free Garlic & Herb
- 1 ½ tsp McCormick Salt-Free Onion & Herb
Instructions
- On high heat bring a pot of water to a boil. Once the water is at a boil, add the penne pasta. (Optional: you may add a little bit of salt to the boiling water)
- Cook the pasta according to package instructions. Once the pasta is done, drain the pasta in a colander and set aside.
- Clean and prep the red bell pepper. Slice the bell pepper into thin slices. Next, chop or mince the garlic and set the veggies aside.
Seasoned Chicken Breast:
- Clean and prep the chicken breast beforehand. Be sure to pat dry with a paper towel.
- Add a little drizzle of olive oil over the chicken.
- Season the chicken with the following spices: 1/2 tsp Dry Parsley 1 tsp Kinder's Blackened with Cayenne & Lemon Rub Seasoning1 tsp Garlic Powder 1 tsp Onion Powder 2 tsp Dash Salt-Free Lemon pepper seasoning 2 tsp Dash Salt-Free Chicken Grilling Blends
- Rub the seasonings into the chicken and allow the meat to marinate 5 to 10 minutes.
- On medium high heat, add some olive oil to a skillet and allow it to get hot.
- Once the oil is hot, add the seasoned chicken.
- Allow the chicken to cook for 7 to 10 minutes on one side, then flip the chicken over and continue to cook another 7 to 10 minutes.
- Note: The cooking time will vary & it’s based on the thickness of the chicken, so make sure the chicken is fully cooked and safe to consume.
- Use a thermometer to make sure the chicken is at a safe temperature or at 165 ºF.
- Once the chicken is done, remove it from the skillet and set aside. (You may slice the cooked chicken into strips for later)
Sautéed Veggies:
- In the same skillet, add 1 tbsp of butter and allow it to melt.
- Once the butter melts, add the sliced red bell pepper and sauté for 3 minutes.
- Add the spinach & allow it to wilt down for 1 or 2 minutes.
- Then, Add the fresh garlic and sauté for 1 minute or until it becomes fragrant.
- Next, remove the sautéed veggies from the skillet and set aside.
Seasoned Pasta sauce:
- Add 1 tbsp of butter to the skillet and allow it to melt.
- Add the jarred Alfredo sauce and the following ingredients: 1/2 Cup Mozzarella Cheese1/2 tsp Parsley 1/2 tsp Lawry’s Seasoned Pepper1 ½ tsp McCormick Salt-Free Garlic & Herb 1 ½ tsp McCormick Salt-Free Onion & Herb
- Stir all the ingredients together and lower the heat to medium low or low heat.
- Allow the sauce to slightly simmer for 5 minutes. Do a taste test of the sauce and make adjustments if needed.
- Once the sauce is to your liking, add the penne pasta and sautéed veggies. Stir everything together until it’s well blended.
- Plate the pasta into serving bowls.
- Add the sliced chicken on top.
- Garnish with more parsley.
- Serve with fresh garlic bread or a side salad and enjoy!
