Chicken Alfredo Fettucine Recipe
Chicken Alfredo is a classic Italian dish that we all can’t seem to get enough of! It’s a home comfort food that taste and looks like a gourmet restaurant meal.
Well-seasoned chicken that is sauteed in some olive oil and butter, on top of a creamy sauce that’s tossed in fettuccine noodles. A rich velvety sauce that comes together so easy with Parmesan cheese, whipping cream, butter, and garlic. Feel free to add a little bit of spices and seasonings to your sauce to kick it up a notch.
Yes, it’s easy to buy Alfredo sauce from the jar. But there’s no need to be intimidated to make your own sauce from scratch. This recipe is very simple and easy to follow. It’s a great base to start for beginner cooks!
Chicken Alfredo Fettucine Recipe
Ingredients
- 3 to 4 Tbs Butter
- 1 to 2 Ib Chicken breast or boneless chicken thighs
- Cajun seasoning or All-purpose seasoning.
- 16 oz Fettuccine pasta
- 1 tsp Garlic
- Salt & pepper (for taste). (Alternative: Italian seasoning or Badia All-purpose seasoning.
- 2 cups Half & Half or Heavy whipping cream
- 2 cups Parmesan cheese
- 1/2 cup Italian blend cheese (Alternative: mozzarella is a good option as well)
- Olive oil
Instructions
- First, bring a pot of water to a boil. Once the water starts to boil, add a little salt and the fettuccine noodles.
- Cook the fettuccine noodles according to package instructions. Once the noodles are done, drain the noodles and set aside.
- On medium-high heat, add a little bit of olive oil or butter in a skillet.
- Season the chicken breast or thighs with an all-purpose seasoning or Cajun seasoning with black pepper.
- Sauté the chicken on one side for a few minutes, then flip the chicken over and continue to cook the other side. (Cooking time will vary based on thickness of chicken.)
- Note: make sure that the chicken is fully cooked through. Check with a thermometer for 165 degrees Fahrenheit to ensure doneness.
- Once the chicken is done, remove the chicken from the skillet and set aside.
- Next, add the butter to the same skillet and allow it to melt.
- Add some fresh garlic and sauté for 1 to 2 minutes or until fragrant.
- Whisk in the whipping cream or half & half.
- Add shredded Parmesan cheese and the Italian blend cheese. (Tip: you can use Parmesan cheese and mozzarella cheese combination as well).
- Turn the heat on the stove to low.
- Consistently stir or whisk the cheese until it melts.
- Don’t overcook the sauce.
- Once the cheese has melted, do a taste test for your sauce.
- If you need to add additional seasonings some suggestions are salt & pepper with Italian seasoning Or Badia complete seasoning. (Any all-purpose seasoning will do the job.)
- Toss the fettuccine noodles into your sauce and serve with the sliced chicken on top.
- Serve with garlic bread or a nice side salad. Enjoy!
