Easy Steak Breakfast Burrito Recipe

When it comes to making breakfast burritos, there are so many ways to jazz it up. You can switch out any of the fixings and add what you want. Plus, if you don’t finish it in one sitting- you can store it in the fridge for the next morning. But That’s if you don’t mind having leftovers, and I’m a fan of leftovers. These delicious hearty steak breakfast burritos are so good, you will enjoy eating them for breakfast or brunch. They are such a treat to have once in a while. Yes, making these breakfast burritos takes a little bit of effort. But you can always prep the day before ahead of time. For this recipe feel free to use any cut of meat that you like. If you’re not a fan of chipotle peppers in adobo sauce, you can omit the peppers and just add a few spoons of the adobo sauce for the marinade. The adobo sauce adds such great flavor to the steak, so don’t skip on the sauce.

Steak & Eggs Breakfast Burrito Recipe

- Prepare the marinade: In a bowl add the olive oil, chipotle peppers in adobo sauce, cumin, oregano, black pepper, salt, & lime juice. Mix, then set aside.
- Prep the steak & cut into cubes or bite size pieces. Add the marinade to the steak and allow the steak to marinate for 10 to 15 minutes.
- In a skillet over medium high heat, add a drizzle of olive oil and allow the oil to get hot.
- Add the steak to the skillet and sauté until the steak is fully/properly cooked. Set aside.
- **Parboil the potatoes ahead of time.
- In a skillet, add a drizzle of olive oil and allow it to get hot over medium high heat. Add the potatoes and season with the dry seasonings listed under ingredients. Stir and allow the potatoes to cook for 5 to 7 minutes or until tender. Potatoes should be tender & firm not mushy. Remove from skillet and set aside.
- Clean & prep the veggies, cut into thin slices.
- In a skillet over medium high heat, add a drizzle of olive oil and allow it to get hot. Add the sliced veggies and season with the dry seasonings. Sauté the veggies until crisp & tender or to your liking.
- In a bowl crack a few eggs. Add a splash of milk or half & half to make the eggs fluffy. Whisk everything together.
- Over medium low heat, in a skillet add some butter or cooking spray. Once the skillet is hot, add the whisked eggs and cook until the eggs are no longer runny.
- ***If you don’t want to add dairy or nondairy, you can add a splash of water to the eggs.
- Add the cooked food items to the tortilla. Top the burrito off with shredded cheese and wrap the tortilla into a burrito. Optional: you can toast the burrito for a few minutes or to your liking.
- Serve with fresh sliced avocado, salsa, guacamole, or your favorite toppings. Enjoy!
