The Best Curry Chicken Recipe Ever! 

If you’re looking for some comforting & home cooked meal recipes or ideas- you’re at the right place. This is a great curry chicken recipe to try, especially for beginner cooks. My curry chicken recipe is so delicious and tasty. Start out by seasoning the chicken and veggies with the spices. Then, allow the chicken to marinate overnight to get that bold and flavorful experience. By allowing the chicken to marinate, it gives the chicken time to take in all those good spices and flavor.

This curry chicken recipe is unique, and it is in a lane of its own. This is my twist & easy version of Jamaican style curry chicken. This dish is bold and rich in flavor. For this recipe- I recommend a Jamaican curry powder. But if you can’t find one, then the McCormick curry powder is a great option. It may not be the real deal like in Jamaica, but this recipe comes close. It’s delicious and taste excellent. Don’t hesitate to get creative in the kitchen.

 

Tips:

  • Feel free to add a little splash of coconut milk to make a creamy and rich gravy.

 

  • If you like a little spice, add a scotch bonnet pepper. But be careful with the scotch bonnet because that will definitely bring the heat.

Easy Curry Chicken Recipe

Season the chicken and veggies with the spices. Allow the chicken to marinate to get that bold and flavorful curry chicken experience.
Course: dinner, lunch, Main Course

Ingredients
  

  • 3 Ibs Chicken
  • 2 to 3 Tbs Curry Powder
  • 2 Tbs Olive oil
  • 1/2 tsp Black Pepper
  • 1 tsp Chef Paul’s Poultry seasoning
  • few sprigs Thyme
  • 1/2 tsp Ginger paste
  • 1 to 2 tsp Garlic
  • 1/2 tsp Badia all-purpose seasoning
  • 1 tsp tomato paste
  • 3 to 4 stalks green onion
  • 1/2 Red onion diced
  • 2 Potatoes (peeled & chopped)
  • 3 to 4 Cups chicken broth or Water

Method
 

  1. Clean & prep the chicken beforehand. Pat dry with a paper towel & remove the skin.
  2. In a large bowl, add the chicken and season the meat with the dry spices.
  3. Add the diced veggies and mix everything together.
  4. Allow the chicken to marinate overnight, or for at least 30 minutes.
  5. On medium-high heat, add olive oil to a pan.
  6. Once the oil is hot, add a dash or 2 of the Curry Powder (ex: 1/2 tsp). Stir the curry into the oil for 2 to 4 minutes.
  7. Next, add the chicken in batches and brown the chicken for a few minutes on each side.
  8. Once you have browned all the chicken- add the veggies & chicken broth to the pot.
  9. Stir everything together and allow the liquid to come to a boil.
  10. Once the liquid comes to a boil, lower the stove to medium heat and add a lid over the pot.
  11. Allow the chicken to simmer for at least 1 hour. Check the liquid throughout cooking time, add more broth/water if needed.
  12. After the 1-hour mark, do a taste test on your gravy. Add any additional seasonings if needed.
  13. Tip: If you feel your gravy needs a little bit more flavor- a tsp or two of the Badia complete seasoning will do the trick.
  14. Next, add the tomato paste, potatoes and stir. Cook an additional 15 to 20 minutes or until the potatoes are tender. (Don’t overcook the Potatoes or they will be mushy.)
  15. Serve with your side dish of choice. Enjoy!
