Easy & Delicious Baked Smothered Chicken Recipe

This Flavorful Chicken is Baked to perfection, making this dish so irresistible! The meat is so tender and packed with a rich savory flavor. My recipe is simple & easy to follow; it brings back so many memories of my family cooking when back at home. This dish is what I call some good eating. It brings such warmth & comfort to a classic stable. 

My baked smothered chicken recipe is rich in flavor and well-seasoned to perfection. I absolutely love to make extra gravy to pour on top of some hearty mashed potatoes. The gravy is so good and might be my favorite part of this recipe. The creamy gravy is so delectable. You can’t go wrong with some good home cooking and this southern dish is such a favorite. Serve this smothered chicken recipe with rice or mashed potatoes, garlic green beans, and buttered dinner rolls. This makes for a complete meal & you will be stuffed from all that delicious comfort food. 

This smothered chicken recipe is the epitome of some good eating. Perfectly seasoned chicken in a mouthwatering, dreamy gravy and jazzed up with some sliced onions. This is my go-to recipe, when I’m missing some home cooked southern food. For this recipe feel free to use bone-in or boneless chicken thighs. Also, if you want to you may use thin boneless chicken breast instead. If you’re using boneless chicken thighs- try to trim or remove as much of the fat as you can. I love to use boneless chicken thighs because I feel they bring out such good flavor and it’s a little bit cheaper too. This smothered chicken recipe is so easy, and you’ll have a great dinner dish in no time.

Now, when it comes to seasoning the chicken, you can keep it simple with salt & pepper or just use an all-purpose seasoning. But I like to jazz it up a bit sometimes. Aside from complete or all-purpose Seasoning: I add garlic & herb, onion & herb, chili powder, Badia complete seasoning- and sometimes a pinch of cayenne pepper to give it a little spice. After you clean and prepare the meat, season it to perfection and allow it to marinate for at least 25 minutes. Pan sear the chicken in some olive oil in a hot skillet. Allow the chicken to brown on each side, and don’t worry about fully cooking it. You will finish it off in the oven. 

Once the chicken has browned, remove it from the skillet and let’s start working on the gravy. Leave a little bit of oil in the pan & add some flour to the pan drippings. Stir in the flour until it dissolves; then pour in the chicken broth, half & half, and mix everything together. Season the gravy with the same dry seasonings you used to season the chicken. Allow the gravy to simmer & it will slightly thicken up a bit. Place the chicken in a baking dish and pour the gravy over the chicken. Add some sliced onion & cover with aluminum foil. Allow the chicken to finish cooking in the oven until it’s fully/properly cooked. By then the gravy will have thickened up nicely- it won’t be runny or too thick that it doesn’t pour easily. 

The gravy is like liquid gold & should be so flavorful. There’s Nothing like making gravy from scratch. I love to make extra just to pour onto my mashed potatoes because they are such a perfect fit for this recipe. And we can’t forget about the chicken that’s so tender and has absorbed the delicious flavors of the gravy. I adore this southern comfort classic recipe & I hope you enjoy it too.

Ingredients
  

  • 2 Ibs Chicken
  • 1 Tbsp Olive oil
  • 1 Onion Sliced
  • 1 tsp Flour
  • 3 to 4 Cups Chicken broth
  • 1/2 Cup Half & Half
  • 1 ½ tsp All-purpose Seasoning
  • 1 ½ tsp Chicken Seasoning
  • 1 tsp Chili powder or Smoked Paprika

Instructions
 

  • In a large bowl: add the chicken, small drizzle of olive oil, and the dry seasonings. Mix everything together and make sure the chicken is perfectly seasoned.
  • Optional: Marinate the meat for at least 20 to 30 minutes.
  • Next, heat up some olive oil in a skillet and allow the oil to get hot over medium-high heat.
  • Add the seasoned chicken & allow the chicken to brown on each side. It may take 3 to 5 minutes per side. Note: The chicken will finish cooking in the oven, you’re just browning it.
  • Remove the browned chicken from the skillet & place in a baking dish. Set it to the side and make the gravy next.
  • Leave a little bit of oil in the pan to make the gravy. Add some flour and stir it into the pan drippings and allow the flour to dissolve.
  • Next, pour in the chicken broth, half & half, and stir everything together.
  • Season the gravy with the same seasonings you used to season the chicken. Allow the liquid to come to a slight boil and simmer for a few minutes.
  • Tip: After the gravy has simmered for about 5 minutes, do a taste test. Make any adjustments if needed.
  • Pour the gravy over the chicken in the baking dish. Cover with aluminum foil and bake at 350 degrees in the oven.
  • The cooking time will vary but allow the chicken to fully cook. Properly cooked chicken should reach 165 °F, use a thermometer to check for doneness.
  • The gravy should have thickened up. It should be smooth & creamy, not too runny or too thick so that it doesn’t pour easily.
  • Serve over rice or mashed potatoes & enjoy!
